Dear Reader,

Chefs play a unique role in our culture, somewhere between celebrity, artist, and magician. But plenty of them also play the role of humanitarian, combining their love of food and their skill in preparing it to feed their neighbors, whether next-door or, like Chef JosΓ© AndrΓ©s and his World Central Kitchen, around the world.

Chef Sera Cuni is not just creating delicious meals for her community; she’s also combatting food waste, which, as we know, plays a big role in releasing carbon and raising our planetary temperature. (Restaurants in the U.S. throw away between 22 and 33 billion pounds of food annually.)

Sera created Feed-Well Fridges in locations in North Carolina. Each day, Feed-Well volunteers collect unsold prepared food and meals from local restaurants and deliver them to community fridges, which are located in spots where they can be maintained to ensure that all food and meals are properly dated, labeled, and when necessary, disposed of. β€œAs a chef, I get really worked up about throwing food away that someone else could use,” Cuni said. β€œPlus, we only have one planet. So, I’m committed to doing whatever I can to help divert waste from our landfills and make our communities more sustainable.”

Nourishingly,

Dot
